The leafy herb was brought by Spanish conquistadors to Mexico in the 1500s and to the United States soon after. Sometimes referred to as Chinese or Mexican parsley, cilantro has become a staple in Mexican and Tex-Mex dishes, and is also commonly used in Asian cuisine.Cilantro is a member of the Apiaceae family, including celery, cumin, carrots, and parsley. An annual, cilantro has a bold, citrusy taste. GROWING GUIDE: A cool weather annual, it does best in temperatures between 50-85F. Plants can survive a minor frost, but not exposure to high temperatures. Direct sow outdoors thinned to 6” apart, or in a seed tray or individual pots. Put seeds in a moist light potting mix covered to a depth of 1/4”. Keep damp but not soaked. Germination: 7-10 days. When seedlings emerge, they can tolerate full sun, or protected in afternoon shade in hot climates. Once germinated, seedlings need approximately one inch of water per week for optimal foliage growth and development. Plants are ready to harvest in about 3 weeks.
